Ingredients

When you see bacon at the top of this list, you may be excited about giving this recipe a taste before you read another word. Throw in cheese, potatoes, eggs, plus all of the other ingredients, and, well, your mouth may be watering already. Here is the complete list of what you will need in order to begin:

  • One half pound of sliced bacon, chopped
  • One half cup of chopped onion
  • One half cup of chopped green pepper
  • Twelve large eggs, lightly beaten
  • One cup of 2% milk
  • One teaspoon of salt
  • One half teaspoon of pepper
  • One quarter teaspoon of dill weed
  • One package (16 ounces) of frozen shredded hash brown potatoes, thawed
  • One cup of shredded cheddar cheese
  • Minced fresh parsley, optional

Directions

Cook your bacon in a large skillet over medium heat until it is crisp. Once you have finished the bacon, sauté your onion and green pepper in the same skillet you just used for the bacon. Next, whisk your eggs, milk, and seasonings together, and add your hash browns, cheese, onion mixture, and bacon. Finally, transfer everything to a greased 13×9-inch baking dish and bake uncovered at 350 for about 35 to 45 minutes. To test whether it is finished, insert a knife in the center and see it comes out clean.
